Introducing the Gluten Free Meal Plan

It’s been a busy year meeting many wonderful people within the gluten free community! Throughout my travels and connections, the story of personal struggle after a gluten free diagnosis was one of the most common links between the people that I met.  I remember when I was first introduced to Celiac Disease and the gluten free diet, I thought – once you remove gluten from your diet, what else is there left to eat!  It turns out that I wasn’t alone.  Many of you also experienced the same frightening thought.

That’s When My ‘Idea’ Engine Kicked into High Gear

After hearing all of these similar diagnosis stories and struggles to adapt to a gluten free diet based on the tough learning curve, my big idea engine got to work.  How could I help others struggling with the gluten free diet on a larger scale than one-on-one coaching, ecoaching and hosting awareness events?  Where would make the biggest impact?  How can I make this so affordable anyone with Celiac Disease can be a part of this program?

Gluten Free Meal Plan provides simple meal plans that outline every meal of the week. We provide shopping lists to help you make sure you have all the food you need when you go to make it. We offer tips and tricks to eating gluten free, shopping, and just managing your eating life. When you subscribe to Gluten Free Meal Plan, we make it easy to eat gluten free. That’s an entire month of meal plans, recipes and grocery shopping lists for only $9.99!  The only thing not included is me actually going to the grocery store and shopping for you – which if you live in New York City or Northern New Jersey, I could probably work out the details with you to make that happen, too!

How to Make Homemade Guacamole

Handmade guacamole used to be a special treat when I went to an authentic mexican restaurant.  Not anymore!

How to Make Gaucamole

After many, many visits to the most authentic mexican restaurant that I’ve ever been to, I can finally say – I make better guacamole than they do now! It took a lot of trial and error to get the best combination of avocado, onion, cilantro and jalapeño, but I suffered through the deliciousness.

Now I want to share my famous guacamole recipe with you! Here it is:

Prep time: 5 minutes

4 – 6 servings (depending on how much you and your guests love guacamole!)


  • 2 ripened avocados
  • 1 oz fresh cilantro, diced
  • 1/2 white onion, diced
  • 1/2 jalapeño pepper, diced
  • Salt to taste
  • 1 bag of tortilla chips, I love dipping with the Way Better Unbeatable Blues!


  1. Finely dice the white onion, jalapeño pepper and cilantro. Place in Molcajete or medium bowl.
  2. Cut the avocados in half and remove the seed.
  3. Scoop out avacado from the peel, put in a mixing bowl.
  4. Mash together using the pestle or using a fork.
  5. Add salt to taste (be careful not to over salt if you have chosen a salty chip)
  6. Garnish with a cilantro leaf, if desired.

For much of the winter, I rely on my crockpot to make my gluten free meals during the work week.  Despite the tiny little fear of leaving my slow cooker plugged in and cooking during the day, coming home to an apartment that smells delicious and a ready to eat meal is totally worth it.

Gluten Free Chili in a Slow Cooker

Chili and winter go hand in hand. Today, I brought my slow cooker out of storage and welcomed in the snowy weather with a delicious batch of homemade chili.

Prep Time: 25 minutes

Slow Cooker Time: 2 hours on high or 4 hours on low

8 – 10 servings 


  • 1 lbs lean ground beef
  • 1 jar Newman’s Own Tomato Basil sauce
  • 1 cup red wine (merlot or cabernet sauvignon works best)
  • 2 cans kidney beans
  • 1 can garbanzo beans
  • 1 can diced tomatoes
  • 1 green pepper
  • 1 red pepper
  • 1 jalapeno pepper
  • 1 white onion
  • 1 yellow squash
  • 1 large head of garlic
  • Shredded Cheese (optional)


  1. Brown ground beef in a skillet, drain grease.
  2. Add ground beef, kidney beans, garbanzo beans and diced tomatoes to crockpot. Add a layer of tomato sauce and red wine.  Cut up all vegetables add to crockpot. Top with remaining tomato sauce and red wine.
  3. Salt and pepper to taste.
  4. Stir occasionally.
  5. Cook on high for 2 hours or until vegetables are softened.
  6. Top with shredded cheese when serving.

Making Gluten Free Pizza on a Grill

Alright I know it’s cold outside, but I have to share this AMAZING recipe with you!  It tastes exactly like brick oven pizza — and it’s 100% gluten free!

Chebe Cheesy Gluten-Free Bread Mix
GF Tomato Sauce of Your Choice (I really like Bertolli’s Organic Sauce!)
Provolone Cheese (1 Pack)
1 Organic Green Pepper
Boar’s Head Pepperoni
(Feel free to use any toppings of your choice!)

First, prepare the pizza dough as listed on the Chebe Bread Package. (I’ve noticed that I like making Pizza with the Bread, but Chebe also has a Chebe Gluten-Free Pizza Crust Mix.)

Spread the pizza dough out on a large piece of aluminum foil until it is in your desired shape (round, square, oval…or be creative!)

Then, place the pizza dough upside down on the grill, so the top side of the pizza gets nice and toasty.  (Make sure to move the pizza around the grill, so it does not stick.) After about 10 minutes, flip the pizza over and add your chosen pizza sauce.  Next, add cheese slices equally around the pizza dough and follow with other various toppings.  Cook the pizza approximately 15-20 minutes, depending on the heat of your grill. 

Remove the tin foil, and enjoy you’re wonderful pizza!

**Tip: Make sure to oil the foil before spreading out the dough, so it doesn’t stick!
